With so many students applying to the same programs, research, internships, etc., it's important to differentiate yourself in the admissions process to stand out.
In the case of extracurricular activities such as sports and musical instruments, teamwork and leadership can be emphasized, but unless you're winning international awards, it's unlikely to have a significant impact on your admission. If you've taken advantage of the EC programs offered at your school and find that they're not quite where you want to be, you can add research, internships, etc. to give you a competitive edge.
For community service, like volunteering, it's best to do it consistently and over a long period of time and through one organization. A minimum of 2-3 years of EC with at least 3 activities is a good way to show continuity and progression.
